Winter Roots Soup

It’s that time of year when the temperature has dropped and you just can’t get warm! It’s also the time of year when root vegetables are in season! It must be fate; enter my winter roots soup recipe!

Ingredients

  • 2 tbsp coconut or olive oil
  • 1 parsnip, diced
  • 1 sweet potato, diced
  • 2 small carrots, diced
  • 1 small red onion, diced
  • 1 leek, sliced
  • 2 sticks celery, diced
  • 445ml water
  • 1 tsp ground cumin
  • half a fresh chilli, sliced

 

Directions

Heat the oil in a saucepan, add the vegetables and cook for 5 minutes until the vegetables have a little colour.

Add the water, bring to the boil, then cover and cook for 20 minutes or until the vegetables are soft.

Blend until smooth.

Return to the pan, add the cumin and chilli, then season to taste.

Simmer for a further 10 minutes and serve.
