These snack balls are really easy to make and are a great source of protein, which helps to keep you full up and to balance your blood sugar levels.
These are ideal for keeping in the fridge as they can satisfy your need to pick on sweet things.
Ingredients (SERVES 1)
- 4 tbsp coconut flour
- 1 tbsp nut butter (I used cashew nut butter)
- 2-3 squares 70-80% dark chocolate, broken into small pieces
- 1 tsp coconut sugar or xylitol
- 1/2 tsp sea salt
- 1/4 – 1/2 cup of almond milk
- 1 tbsp cacao powder

Method
In a bowl sift the coconut flour and then mix in the salt and coconut sugar. Add the chocolate and nut butter and stir until well combined. Add the milk 1 tbsp at a time, until the mixture reaches a firm dough like consistency. Dust the cacao powder on a tray and roll the ball until completely covered. Eat immediately, or store in the fridge for up to a week (they probably keep longer than that but mine have never lasted that long without being eaten!).
