This is a super convenient breakfast as you’ll make it the night before, so it’ll be ready to eat by the time you wake. It takes around 4 hours ‘firm up’ so you could also make it in the morning to have at lunchtime.
This recipe includes protein, which is an important part of every meal, especially the first meal of the day. Protein helps to balance blood sugar levels and to keep you going until lunchtime. If you suffer from energy slumps, one of the first things to do is increase the protein in your breakfast.
This recipe is also rich in fibre, which is needed for the same reasons as protein (blood sugar balance and satiety) but also to support digestive health as chia seeds help to keep things regular. AND the chia seeds provide essential omega 3, something that is lacking from SO many people’s diets.
It’s also rich in anti-oxidants and tastes darn good too!
Ingredients
SERVES 4
- 1/2 tin coconut milk
- 1/2 tin of water (use the coconut milk tin to measure out water)
- 1/4 cup chia seeds
- 1/4 cup oats
- Handful berries
- 1-2 tbsp honey
- 1 tsp vanilla extract
Method
In a food processor or blender, blend the coconut milk, water, oats, berries, honey and vanilla extract, until smooth. Pour over the chia seeds and mix well. Leave to stand for 10mins and then put in the fridge for at least 4 hours or overnight. Mix well before serving.
